Serves 6
This tasty stew can give you a taste of Spain, even if you are not going abroad this year! Serve with some sangria for the full Spanish experience
Ingredients:
- Olive oil
- 8 chicken thighs
- 125g chorizo
- 1 onion, sliced
- 2 garlic cloves, chopped
- 100ml dry white wine (optional)
- 1 tin of chopped tomatoes
- 1 tin cannellini beans, drained and washed
- 1 sprig of thyme
Method:
1. Heat a small amount of olive oil in a pan. Brown the chicken thighs on both sides for 5mins. Remove from the pan.
2. Chop up chorizo, as chunky as you like. Fry off in the pan until brown & releasing tasty red oil. Add the sliced onions and garlic and fry for a couple more mins, until softened.
3. Add the wine if you are using it, and cook until almost evaporated. Add the tomatoes, beans, water and seasoning. Return the chicken to the pan.
4. Simmer for 30-35 mins with the lid on, topping it up with water if it starts to look dry. Check that the chicken is cooked & serve up.
