Makes 12 pieces

This recipe for peanut butter fudge makes a great treat. Perfect for a weekend snackkk, or as a homemade gift, the kids will love making it!

Ingredients:

  • 125g butter
  • 500g brown sugar
  • 120ml milk
  • 250g crunchy peanut butter
  • 1 vanilla pod (seeds only)
  • 300g icing sugar

Method:

  1. Melt the butter in the saucepan. Stir in the brown sugar and milk, bring to the boil for 2-3 mins without stirring.
  2. Remove from the heat and stir in the vanilla pod seeds and the peanut butter.
  3. Put the icing sugar in a bowl and pour the hot mixture onto it. Beat until smooth.
  4. Pour into a 20cm baking tin and set aside to cool. Place in the fridge when cool enough.
  5. Cut the fudge into squares and enjoy. Store in an airtight container.
