Serves 4
This hearty beef and stout stew is a great winter warmer, best served alongside mashed potato. However you decide to serve it, beef and stout stew is sure to become a firm favourite.
Ingredients:
- Vegetable oil
- 1kg stewing steak
- 10 carrots, cut into chunks
- 1 tbsp plain flour
- 500ml can of Guinness
- 1 beef stock cube
- Pinch of sugar
- 3 bay leaves
- Sprig of thyme
- Mashed potato (to serve)
Method:
- Heat oven to 160C/140C fan/gas mark 3. Put an oven proof casserole dish on the hob and heat 1 tbsp veg oil. Brown the meat really well, in batches if you need to.
- Take the beef out of the pan and set aside. Add the onion and carrots to the pan, and fry off for a minute. Add the flour, the Guinness and a stock cube, and give it a good stir, adding any meat juices as you go.
- Season and add the bay leaves. Bring it to the boil and let it simmer.
- Put the lid on and pop it in the oven for 2 ½ hours.
- Serve with mash.
