Serves 4

This hearty beef and stout stew is a great winter warmer, best served alongside mashed potato. However you decide to serve it, beef and stout stew is sure to become a firm favourite.

Ingredients:

  • Vegetable oil
  • 1kg stewing steak
  • 10 carrots, cut into chunks
  • 1 tbsp plain flour
  • 500ml can of Guinness
  • 1 beef stock cube
  • Pinch of sugar
  • 3 bay leaves
  • Sprig of thyme
  • Mashed potato (to serve)

Method:

  1. Heat oven to 160C/140C fan/gas mark 3. Put an oven proof casserole dish on the hob and heat 1 tbsp veg oil. Brown the meat really well, in batches if you need to.
  2. Take the beef out of the pan and set aside. Add the onion and carrots to the pan, and fry off for a minute. Add the flour, the Guinness and a stock cube, and give it a good stir, adding any meat juices as you go.
  3. Season and add the bay leaves. Bring it to the boil and let it simmer.
  4. Put the lid on and pop it in the oven for 2 ½ hours.
  5. Serve with mash.
