Serves 6-8

Impress friends and family with this carrot cake with cream cheese frosting. A tasty treat all-year round, carrot cake is gaining in popularity as it has been made trendy again thanks to TV baking shows.

Topped with this cream cheese frosting, this is one carrot cake recipe that is too hard to resist.

Ingredients:

  • 300g plain flour
  • 200g finely grated carrots
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 2tsp cinnamon
  • 200g soft brown sugar
  • 4 eggs
  • 250ml oil
  • Zest of 1 orange
  • Zest of 1 lemon
  • 150g chopped walnuts
  • 125g unsalted butter, soft
  • 50g icing sugar
  • 250g cream cheese

Methods:

  1. Heat the oven to 150C/fan 130C/gas mark 2 line a 20cm deep cake tin with baking parchment (or just butter well)
  2. Sift the flour, bicarbonate of soda, baking powder, cinnamon together and stir in the sugar.
  3. Beat the eggs with the oil and the zest. Stir in the carrots.
  4. Fold everything into the flour mixture, and stir in the walnuts.
  5. Bake for 1 hour 20 mins, or until firm.
  6. Beat the butter and the icing sugar together, and then beat in the cream cheese.
  7. Once cool, top the carrot cake with the icing and enjoy.
