Serves 4

This versatile dish can be served alongside many of your family's favourite meals. Whichever way you decide to serve it, this bacon and potato mash is bound to become a staple meal.

If you prefer a smooth rather than a rough mash, you could even run your bacon and potato mash through a blender before serving.

Ingredients:

  • Olive oil
  • 200g smoky bacon, cut into lardons
  • 750g potatoes, peeled & chopped into chunks
  • 1 red onion
  • 2-3 crushed garlic cloves
  • Salt & pepper
  • 4 eggs (optional)

Method:

  1. Heat 2tbsp olive oil in a frying pan and fry off the bacon lardons. Add the diced potato and cook on a medium heat until the potatoes are slightly translucent.
  2. Stir in the onion and garlic and season. Reduce the heat and cook until the potatoes are cooked through. Remember to stir it regularly or it will burn on the bottom.
  3. Fry or poach the eggs, keeping the yolk runny.
  4. Serve the potato & bacon mix with the egg on top.
  5. Enjoy your bacon and potato mash!
