Serves 4
This bacon and chorizo pasta is really simple to make. With the spicy chorizo, it is sure to become a firm family favourite.
Ingredients:
- Olive oil
- 1 large onion, sliced thinly
- 1 red pepper
- 200g mushrooms, sliced thinly
- 8 rashers smoked bacon
- ½ a chorizo sausage, sliced
- ½ a tin of chopped tomatoes
- 325g fusilli pasta
- 1 ball of light mozzarella, diced
- 1 bag of small bag of nachos (crushed)
- 125g mature cheddar
Method:
- Add a big glug of olive oil to a pan and heat. Add the onion and cook until soft but not coloured.
- Add the peppers, mushrooms and bacon, and cook until soft.
- Stir in the chorizo and tomatoes. Boil and simmer for 5 mins, then remove from the heat.
- Preheat the oven to 180C (gas mark 3)
- Cook the pasta in salted boiling water, until it is almost tender. Drain, and put into an oven proof baking dish.
- Give the tomato sauce a mix. Season to taste, and pout over the pasta. Top with the mozzarella and grated cheese and the nachos. Bake for 20 mins, until bubbling.
- Serve with garlic bread or a side salad.
