Serves 4
This is a brilliant twist on a classic, perfect for a weekend dinner. It is very impressive, but very simple!
Ingredients:
- Olive oil
- 500g sweet potato, peeled & cut into chunks
- 4 skinless chicken thigh fillets, cut into large chunks
- 1 large red onions, cut into wedges
- 1 tbsp rogan josh curry paste
- 2 large tomatoes, chopped
- 125g spinach
Method:
1. Boil the sweet potatoes in water until tender. Drain and set aside.
2. Heat the oil in a frying pan, then add the chicken and the onion. Cook until the chicken is browned and cooked through.
3. Stir in the curry paste, cook for one minute. Add the tomatoes.
4. Pour in 100ml boiling water. Simmer for five minutes. Add the spinach. Cook for two minutes.
5. Fold in the sweet potatoes and heat through.
6. Serve with basmati rice and naan bread.
