Serves one
This one pot chicken pilaf is a perfect mid-week meal, and really tasty! The recipe is for one serving, but can easily be doubled or tripled if your whole family would like to enjoy some chicken pilaf. Best of all, because it is a one pot recipe, there is less washing up to do!
Ingredients:
- Sunflower oil
- 1 small onion
- 1 chicken breast (or 2 small boneless chicken thighs)
- 2tsp curry paste
- A third of a mug of basmati rice
- Two thirds of a mug of chicken stock
- 1 mug frozen veg
- Half a mug of frozen leaf spinach
Method:
- Heat 1tbsp sunflower oil in a pan. Fry the onions until soft (not coloured).
- Cut the chicken into chunks and add it to the pan. Fry until golden, then stir in the curry paste and rice. Fry for one min.
- Pour in the stock and add the veg. bring to the boil and then simmer for 10 mins.
- When all the stock has been absorbed and the chicken is cooked through, serve.
