With its cajun influences,this Chicken Jambalaya with spicy chorizo is a real treat! Delicious and easy to prepare, this easy-to-cook recipe is sure to become a firm family favourite.

Originating from New Orleans, this chicken jambalaya recipe has cajun influences, with spicy chorizo and cayenne pepper.

Ingredients:

  • 1 tbsp olive oil
  • 2 chicken breasts, cut into chunks
  • 1 onion, diced,
  • 2 crushed garlic cloves
  • 75g sliced chorizo
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 250g long grain rice
  • 1 tin plum tomatoes
  • 350ml chicken stock

Method:

  1. Heat the oil in a pan with a lid. Brown the chicken for 6-8 mins, until golden. Remove from the pan and leave to one side.
  2. Put the onion in the pan and cook until soft. Add the peppers, garlic, chorizo, cayenne pepper, paprika, salt & pepper & cook for 5 mins.
  3. Stir in the chicken and the rice.
  4. Add the tomatoes and the stock and cook for 20-25 mins.
  5. Check that the rice is cooked and the chicken is tender, and serve; traditionally chicken jambalaya is served alongside a crunchy salad.
