With its cajun influences,this Chicken Jambalaya with spicy chorizo is a real treat! Delicious and easy to prepare, this easy-to-cook recipe is sure to become a firm family favourite.
Originating from New Orleans, this chicken jambalaya recipe has cajun influences, with spicy chorizo and cayenne pepper.
Ingredients:
- 1 tbsp olive oil
- 2 chicken breasts, cut into chunks
- 1 onion, diced,
- 2 crushed garlic cloves
- 75g sliced chorizo
- 1 tsp cayenne pepper
- 1 tsp smoked paprika
- 250g long grain rice
- 1 tin plum tomatoes
- 350ml chicken stock
Method:
- Heat the oil in a pan with a lid. Brown the chicken for 6-8 mins, until golden. Remove from the pan and leave to one side.
- Put the onion in the pan and cook until soft. Add the peppers, garlic, chorizo, cayenne pepper, paprika, salt & pepper & cook for 5 mins.
- Stir in the chicken and the rice.
- Add the tomatoes and the stock and cook for 20-25 mins.
- Check that the rice is cooked and the chicken is tender, and serve; traditionally chicken jambalaya is served alongside a crunchy salad.
