Looking for an easy-peasy dessert that looks and tastes impressive? Try our cranachan recipe – a traditional Scottish dessert of oats, cream, whisky and raspberries. Serves 6.
Ingredients
- 85g rolled oats
- 3 tbsp whisky
- 600ml double cream
- 85g caster sugar
- 450g raspberries
Method
- Toast the rolled oats by spreading on a baking tray and placing briefly under a medium grill – take care not to burn them! Remove oats from the heat and sprinkle the whisky over them, allowing it to absorb.
- Put to one side a handful of raspberries for decoration. Place the rest in a bowl and crush gently with a fork.
- Whip the double cream, adding the caster sugar as the cream starts to stiffen. Continue to whisk until soft peaks form, but be careful not to over-whisk.
- Fold the oats into the cream. Spoon a layer of this mixture into glass serving dishes.
- Add a layer of crushed raspberries and continue layering the cream mixture and raspberries, finishing with a layer of cream.
- Finish with a sprinkling of rolled oats and a garnish of raspberries. Chill for 30 minutes before serving (if you can wait that long!).
