Serves 4

This cheesy chicken recipe is really filling and is quick to prepare. It serves four so is perfectly to feed the family, and goes perfectly with roast potatoes and tomatoes.

Whatever you decide to serve it with, cheesy chicken is sure to be a family favourite!

Ingredients:

  • 8 chicken thighs, skin on
  • 85g garlic & herb cheese
  • 500g new potatoes, halved
  • 4 medium tomatoes, halved
  • 1 garlic clove, crushed
  • ½ tsp caster sugar
  • 6 thyme sprigs (or 1 ½ dried thyme)
  • Olive oil

Method:

  1. Heat the oven to 200c/180c fan/ gas mark 6.
  2. Lift the skin on the chicken and put the cheese between the flesh and the skin. Place in a roasting tray, skin up.
  3. Surround the chicken with the potatoes and tomatoes (cut side up). Put the sugar and garlic over the tomatoes.
  4. Season & scatter the thyme over the tray & drizzle with oil.
  5. Roast for 45 mins. Check the chicken is cooked thoroughly
  6. Enjoy your cheesy chicken and roasties!
