Serves 4 This delicious minestrone soup is the perfect winter warmer. It is hearty and filling, perfect for cold evenings. Ingredients:
- 1 onion, chopped
- Olive oil
- 1 garlic clove, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped (as small as possible)
- 1 tin borlotti beans, drained & rinsed (or black eye beans or kidney beans)
- 600ml veg stock
- 100g kale, chopped & rinsed
Method:
- Heat the oil in a pan and cook the onions until soft.
- Add the garlic, carrots and celery. Cook for a couple of minutes until softened.
- Add the tomatoes, beans and stock. Simmer for 20 minutes.
- Add the kale and simmer for 10 minutes.
- Serve with crusty bread, and enjoy!
