Serves 4 This delicious minestrone soup is the perfect winter warmer. It is hearty and filling, perfect for cold evenings. Ingredients:

  • 1 onion, chopped
  • Olive oil
  • 1 garlic clove, chopped
  • 2 celery stalks, chopped
  • 2 carrots, chopped (as small as possible)
  • 1 tin borlotti beans, drained & rinsed (or black eye beans or kidney beans)
  • 600ml veg stock
  • 100g kale, chopped & rinsed

Method:

  1. Heat the oil in a pan and cook the onions until soft.
  2. Add the garlic, carrots and celery. Cook for a couple of minutes until softened.
  3. Add the tomatoes, beans and stock. Simmer for 20 minutes.
  4. Add the kale and simmer for 10 minutes.
  5. Serve with crusty bread, and enjoy!
