Serves 6-8

This deliciously nutty bread sauce recipe goes well with turkey, chicken or game. It’s an easy extra for Christmas Day and is just as good served cold with leftovers during Christmas week!

Ingredients

  • 50g cobnuts, husks removed
  • 250ml milk
  • 100ml double cream
  • 1 small onion, peeled
  • 1 bay leaf
  • 1 clove
  • 150g fresh breadcrumbs

Method

  1. Place all of the ingredients except the breadcrumbs into an ovenproof dish and mix. Make a circle out of greaseproof paper and place it on top of the ingredients in the dish. Bake for 30 minutes at 150C/300F/gas mark 2.
  2. Remove from the oven and allow to cool for ten minutes. Remove the onion, bay leaf and clove and discard. Pour the mixture into a blender and blend to break up the cobnuts. Stir in enough breadcrumbs to make a thick porridge consistency.
  3. Return the mixture to the dish, cover and return to the oven for a further 10-15 minutes before serving immediately.
