Marinades are a great way of keeping meat and fish tender and moist as well as adding extra flavour.

Honey & mustard marinade

  • 2 tablespoon(s) Dijon mustard
  • 60ml honey
  • 60ml red wine vinegar
  • 60ml extra virgin olive oil
  • Ground pepper

 

Whisk ingredients together in a small bowl. Pour over 6 pork chops or 4 chicken breasts and refrigerate for 1 to 3 hours before cooking.  The marinade will keep in fridge for up to 3 weeks.

Mediterranean marinade

  • 4 garlic cloves
  • 4 sprigs rosemary
  • 1 teaspoon salt
  • Black pepper
  • 5 tablespoons extra virgin olive oil
  • 60ml red wine vinegar
  • 1 teaspoon sugar

Smash the garlic with the leaves of the rosemary sprigs, then add to a small bowl and mix with the salt and pepper (to taste). Add the oil, red wine vinegar and sugar then mix well.

Marinate steak in a resealable bag, refrigerated, for 4 to 24 hours. Flip the bag occasionally.
