These zesty lemon and white chocolate cookies are the perfect summer time treat. With simple ingredients and a straight-forward recipe, the whole family can join-in: just make sure that you also get the kids to help do the washing up!

As well as being the perfect treat, wrapped in some cellophane with a gift tag attached these lemon and white chocololate cookies could make a great homademade gift from the kids for aunts or grandma or as a thank-you present to a favourite teacher.

Whichever you choose; you’ll never believe that making lemon and white chocolate cookies could ever be so simple!

Ingredients:

  • 160g unsalted butter
  • Zest of 2 lemons
  • 85g muscovado sugar
  • 85g caster sugar
  • 2 eggs
  • 400ml plain flour
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • 200d white chocolate

Method:

  1. To prepare to bake your lemon and white chocolate cookies, firstly pre-heat the oven to gas mark 4.
  2. Cream the butter, sugar and lemon zest until fluffy and pale in colour. Gradually beat in the eggs, and sift in the flour, baking powder and bicarbonate of soda bit by bit. Stir in the chocolate chips.
  3. Roll the mixture into walnut sized balls and flatten slightly. Space them evenly from each other, leaving space for them to spread slightly.
  4. Bake for 12 mins, or until golden.
  5. Enjoy your delicious lemon and white chocolate cookies.
