Serves 6

The king of simple, healthy and hearty meals is turkey pasta. This recipe combines turkey with broccoli in a delicious onion and garlic sauce.

The dish takes less than half an hour to cook and each serving is less than 500 calories. Better still, penne pasta soaks up all of the flavours so any leftovers make a really tasty lunch the next day.

Ingredients

  • 3 tablespoons olive oil
  • 450g turkey breast chunks
  • 1 tablespoon chopped onion
  • 2 cloves garlic, crushed
  • 175g fresh broccoli florets
  • Salt and pepper to taste
  • 1 pinch dried oregano
  • 500g dry penne pasta
  • 4 tablespoons fresh basil leaves, cut into thin strips

Method

  1. In a large frying pan over medium heat, warm oil and add turkey; cook until slightly brown. Add onion and garlic to cook for about 5 minutes until garlic turns golden.
  2. Add broccoli, salt, pepper, oregano and 6 tablespoons of water to make a sauce. Cover and turn down heat to simmer for about 10 minutes.
  3. Meanwhile, bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until tender; drain and add back into pot.
  4. Add your turkey and veg mixture into the pasta and mix well. Add basil and toss well before serving.
