Makes around 25 biscuits

Show off your baking skills with these festive gingerbread goodies, which not only look, smell and taste lovely, but are extremely easy to make.

Ingredients:

  • 600g all-purpose flour
  • 200g unsalted butter, softened
  • 200g dark brown sugar
  • 75ml golden syrup
  • 1/2 tsp baking soda
  • 1 egg
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1 pinch of salt

Method:

  1. In a large bowl, beat the butter and sugar until it's fluffy and creamy. Add the egg and the syrup and beat until well combined. In another bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, salt and vanilla extract, and gradually add this mixture to the syrup mix to form dough.
  2. Divide your dough in half, cover separately in cling film and refrigerate for 2 hours. When ready to bake, take the dough from the fridge. If it is not soft enough to roll, leave it at room temperature for about 10 minutes. On a lightly floured surface, roll the dough to 6mm thickness, about the thickness of 2 stacked pound coins.
  3. Using either Christmas-shaped cutters, or a sharp knife, cut out different festive shapes from your dough – trees, stars, snowflakes, or the classic gingerbread man! Then place your uncooked biscuits on baking paper leaving a 2cm gap between each.
  4. Bake your cookies in the oven for 12 minutes 190/375/gas mark 5, until firm to the touch and light golden on edges. Remove from the oven and place them on a wire rack to cool completely. Serve and savour the taste of your home made biscuits!
