Makes 15 brownies

These chocolate fudge brownies will be popular with the kids. Delicious and really simple to make, they are bound to become a firm favourite.

Ingredients:

  • 225g plain chocolate
  • 140g butter (softened)
  • 3 eggs
  • 225g caster sugar
  • 100g plain flour
  • 1tsp baking powder
  • 1tbsp cocoa powder

For the icing:

  • 25g plain chocolate
  • 2 tbsp double cream
  • 1/2 tsp golden caster sugar

Method:

  1. Preheat the oven to gas mark 4/180C/160C fan. Line a rectangular tin with grease proof paper.
  2. Chop up 175g plain chocolate and melt in a bowl over a pan of boiling water. Once melted, stir in the butter and mix well. Allow this mixture to cool.
  3. Chop up the rest of the plain chocolate and set aside. Whisk the 225g caster sugar and the eggs until fluffy, pale and almost doubled in size. Pour in chocolate mix and fold in well.
  4. Sift in the flour, cocoa and baking powder and fold in. add the chopped chocolate and fold again (these will be like chocolate chips)
  5. Pour the mix into the lined tin, and bake in the middle of the oven for 25-30 minutes, until a bit crusty on top and just set in the middle. Allow to cool in the tin.
  6. For the icing, melt the chocolate over a pan of boiling water. Stir in the sugar and the cream. Add water to make it a pouring consistency.
  7. Turn out the brownies once completely cooled, they will crack otherwise. Top the chocolate fudge brownies with the icing, cut and serve.
