Makes 50 brownies

These squidgy sweet brownies are great fun to make with the kids. They’re really easy to prepare and perfect for sharing amongst your friends, family and colleagues.

Ingredients:

  • 250g unsalted butter
  • 200g dark chocolate, broken up (Bourneville is perfect)
  • 75g dried sour cherries
  • 80g cocoa powder, sifted
  • 65g plain flour, sifted
  • 1 teaspoon baking powder
  • 360g caster sugar
  • 4 large free-range or organic eggs
  • optional: zest of 1 orange
  • 250ml creme fraiche

Method

  1. In a large bowl over some simmering water, melt the butter and the chocolate and mix until smooth. Stir in the cherries. In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar, then add this to the chocolate and cherry mixture. Stir well. Beat the eggs and mix in until you have a silky consistency.
  2. Pour your brownie mix into a 25cm square baking tin lined with greaseproof paper, and place in the oven at 180C/350F/gas mark 4 for around 25 minutes. When they’re ready, the brownies should be springy on the outside but gooey in the middle.
  3. Allow them to cool in the tray, then carefully transfer to a large chopping board and cut into chunky squares. These make a fantastic dessert served with a dollop of creme fraiche mixed with some orange zest.
