This green soup recipe is fantastically light and really simple to make. With enough to serve two, you and a friend could enjoy green soup.. or you could give yourself an extra large helping!
However you decide to eat your green soup, you’re bound to enjoy making it with this one pot recipe.
Ingredients:
- ½ a bunch of spring onions, chopped
- Olive oil
- 1 potato, peeled & diced
- 500ml veg stock
- 140g watercress, spinach & rocket
Method:
- Put 1tbsp olive oil in a pan and heat. Cook the spring onions until soft.
- Add the potato & cook for 2 mins, then add the stock & simmer until the potato is cooked through.
- Add the leaves, simmer for 1 min, then whizz your green soup in a blender and serve.
